- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 3 cups old-fashioned oats
- 1 cup dried cherries
- 1 cup white chocolate chips
- 1/2 teaspoon ground cinnamon (optional)
Feel free to substitute dried cranberries for cherries or semi-sweet chocolate chips for white chocolate if that’s what you have on hand. Cooking should feel adaptable and suit your taste.
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes with an electric mixer.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. If you’re using cinnamon, add it to this mix too.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the oats, dried cherries, and white chocolate chips until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie as they will spread.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the centers are set.
- Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
