Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes with an electric mixer.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. If you’re using cinnamon, add it to this mix too.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the oats, dried cherries, and white chocolate chips until evenly distributed throughout the dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie as they will spread.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the centers are set.
  9. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
