Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar, divided
- 1/2 cup light brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup sour cream
- 1 1/2 cups strawberries, hulled and chopped
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
If strawberries aren’t in season, feel free to substitute with raspberries or blueberries. The beauty of this recipe is its adaptability. Just like my father’s seafood boils, there’s room for creativity and personalization.
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, allowing some overhang for easy removal later.
- In a large bowl, combine flour, 1/2 cup sugar, brown sugar, baking powder, and salt. Stir in the melted butter, egg, and vanilla extract until the mixture is crumbly.
- Press half of the crumb mixture into the bottom of the prepared pan to form the crust. Set aside the remaining crumb mixture.
- In another bowl, beat the cream cheese until smooth. Add the remaining 1/2 cup sugar and sour cream, beating until well combined and creamy.
- Spread the cream cheese mixture evenly over the crust in the pan.
- In a small bowl, toss the chopped strawberries with cornstarch and lemon juice. Spread the strawberries evenly over the cream cheese layer.
- Sprinkle the reserved crumb mixture over the strawberry layer.
- Bake for 35-40 minutes or until the top is golden brown. Allow to cool completely before lifting out of the pan and slicing into bars.
