  • 1/4 cup all-purpose flour

  • 5 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 2 cups beef broth
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon onion powder
  • 1 tablespoon soy sauce
  • Optional: 1 cup sliced mushrooms

Feel free to make substitutions based on what you have on hand. For instance, if you’re out of fresh thyme, dried thyme works just as well—just use about half the amount. And while I love the depth mushrooms add, if they’re not your thing, you can skip them altogether.

Instructions

  1. Start by seasoning the beef tips with salt and pepper. Then, lightly coat them with flour, shaking off any excess. This step helps in creating a nice crust when you sear them and also thickens the sauce as it cooks.
  2. In a large skillet, melt the butter over medium-high heat. Add the beef tips in batches, searing them until browned on all sides, about 3-4 minutes per batch. Transfer the seared beef into your slow cooker.
  3. In the same skillet, reduce the heat to low and add the minced garlic. Sauté for about a minute, just until fragrant, making sure not to burn it. Add the Worcestershire sauce, beef broth, thyme, onion powder, and soy sauce, and bring the mixture to a gentle simmer.
  4. Pour the broth mixture over the beef tips in the slow cooker. If you’re using mushrooms, add them at this point. Stir everything to combine.
  5. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the flavors are well combined.
  6. Before serving, give it a quick taste and adjust the seasoning if necessary. I often find a pinch more salt helps bring everything together.
