I’ve always believed that you don’t need a pantry full of exotic ingredients to create something memorable. This recipe uses everyday items you probably already have, with a few optional substitutions to suit your taste or dietary needs.
- 1 ½ pounds boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 ½ cups chicken broth
- 1 cup frozen peas
- 1 cup diced carrots
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- Fresh parsley, for garnish (optional)
Substitutions: Feel free to use brown rice for a nuttier flavor, or swap in chicken thighs if you prefer a richer taste. For a vegetarian version, substitute the chicken with chickpeas and use vegetable broth.
Instructions
- Start by heating the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until fragrant and translucent. This step reminds me of the times I’d rush home from work, knowing that the smell of cooking onions would soon fill the house with warmth.
- Transfer the sautéed onion and garlic to your slow cooker. Place the chicken breasts on top, followed by the rice, carrots, and peas.
- Pour the chicken broth over the ingredients, ensuring the rice is fully submerged. Sprinkle the thyme, salt, and pepper evenly over the top.
- Cover the slow cooker and set it to cook on low for 6-7 hours, or on high for 3-4 hours. The slow cooker was my best friend during busy days when I still wanted to put something homemade on the table without the fuss.
- Once cooked, remove the chicken breasts and shred them with two forks. Stir the shredded chicken back into the rice mixture, mixing well to incorporate all the flavors.
- Garnish with fresh parsley before serving, if desired. I love how a sprinkle of fresh herbs can elevate a dish, much like my grandmother’s biscuits that always had a touch of something special.
