If you’re out of pistachios, feel free to substitute with another nut like walnuts or pecans. For a different twist, try white chocolate chips instead of semi-sweet for a sweeter finish.

- Preheat your oven to 350°F and line a baking sheet with parchment paper. An essential step that signals the beginning of any baking adventure in my kitchen.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes. This is where the magic begins, as the sugars and butter create a creamy base.
- Add in the eggs, one at a time, beating well after each addition, followed by the vanilla extract. My grandmother always said to never rush this step; it’s the secret to a smooth batter.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Remember, overmixing can lead to tough cookies!
- Fold in the chocolate chips and chopped pistachios, making sure they’re evenly distributed. This is the part where I often get a bit generous with the chocolate chips—after all, who’s counting?
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Lightly sprinkle the tops with flaky sea salt.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The smell of these cookies baking is bound to draw everyone into the kitchen.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This is usually the point where I get impatient and sneak a warm cookie straight from the sheet.
