If you’re out of all-purpose flour, a blend of whole wheat and all-purpose flour can add a nutty depth. And if you prefer a stronger vanilla flavor, double the vanilla extract for an extra boost.
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper. This step always reminds me of the anticipation of my grandmother’s kitchen, waiting for something delicious.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the honey, eggs, and vanilla extract to the mixture, beating until well combined. The honey adds a natural sweetness that’s hard to resist.
- In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. This spice was a staple in my childhood home, adding warmth to everything from cookies to oatmeal.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix, as it can make the cookies tough.
- Drop tablespoon-sized balls of dough onto the prepared baking sheets, leaving space between each to allow for spreading.
- Lightly sprinkle each cookie with a pinch of coarse sea salt. The salt balances the sweetness and enhances the cinnamon flavor.
- Bake for 10-12 minutes or until the edges are golden brown. Every oven is different, so keep a close eye on them after the 10-minute mark.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
