- 2 cups cooked and shredded chicken breast
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup banana peppers, sliced
- 1/2 cup black olives, sliced
- 1/4 cup Parmesan cheese, grated
- 1/2 cup Italian dressing (store-bought or homemade)
- 1/4 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 loaf of crusty Italian bread, sliced
Instructions
- Start by preparing your dressing. In a small bowl, whisk together the Italian dressing, mayonnaise, red wine vinegar, and oregano. Season with salt and pepper to taste. Set aside.
- In a large bowl, combine the shredded chicken, cherry tomatoes, cucumber, red onion, banana peppers, and black olives.
- Pour the dressing over the chicken and vegetable mixture, tossing gently to coat everything evenly. Be sure to taste and adjust seasoning as needed.
- Add the grated Parmesan cheese and mix well, ensuring it’s evenly distributed throughout the salad.
- For an extra touch of indulgence, toast your slices of Italian bread under the broiler for about 2 minutes, or until they’re golden and crispy.
