  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Scale

In keeping with my philosophy of using everyday ingredients, here’s what you’ll need to create this delicious meal:

  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 2 cups cooked brown rice or quinoa
  • Optional toppings: feta cheese, kalamata olives, pita chips

Instructions

Let’s get cooking! Follow these steps, and you’ll have a delightful meal ready in no time:

  1. Heat the olive oil in a large skillet over medium heat. Add the ground turkey, breaking it up with a spoon as it cooks.
  2. Season the turkey with garlic powder, onion powder, oregano, cumin, salt, and pepper. Cook until the turkey is browned and cooked through, about 8-10 minutes.
  3. While the turkey is cooking, prepare the yogurt sauce by combining the Greek yogurt, lemon juice, and dill in a small bowl. Stir until combined and set aside.
  4. In a separate bowl, mix the cherry tomatoes, cucumber, and red onion to create a fresh salad topping.
  5. To assemble the bowls, start by placing a serving of brown rice or quinoa at the bottom of each bowl.
  6. Top with the cooked turkey, followed by the fresh salad mix. Drizzle with the yogurt sauce.
  7. For added flavor, sprinkle some feta cheese, a few kalamata olives, and crunchy pita chips on top.
