- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- 2 cups cooked brown rice or quinoa
- Optional toppings: feta cheese, kalamata olives, pita chips
Instructions
Let’s get cooking! Follow these steps, and you’ll have a delightful meal ready in no time:
- Heat the olive oil in a large skillet over medium heat. Add the ground turkey, breaking it up with a spoon as it cooks.
- Season the turkey with garlic powder, onion powder, oregano, cumin, salt, and pepper. Cook until the turkey is browned and cooked through, about 8-10 minutes.
- While the turkey is cooking, prepare the yogurt sauce by combining the Greek yogurt, lemon juice, and dill in a small bowl. Stir until combined and set aside.
- In a separate bowl, mix the cherry tomatoes, cucumber, and red onion to create a fresh salad topping.
- To assemble the bowls, start by placing a serving of brown rice or quinoa at the bottom of each bowl.
- Top with the cooked turkey, followed by the fresh salad mix. Drizzle with the yogurt sauce.
- For added flavor, sprinkle some feta cheese, a few kalamata olives, and crunchy pita chips on top.
