  • 3 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm water (about 110°F)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 cup grated Parmesan cheese

Feel free to substitute the fresh herbs with dried ones if that’s what you have on hand. Just remember to use about one-third of the quantity of dried herbs compared to fresh.

Instructions

  1. In a large mixing bowl, combine the flour, yeast, sugar, and salt. Stir until well mixed.
  2. Gradually add the warm water and melted butter to the dry ingredients, stirring until a dough begins to form.
  3. Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until it becomes smooth and elastic. This is my favorite time to let my mind wander while kneading to the rhythm of music playing softly in the background.
  4. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan.
  6. In a small bowl, combine olive oil, garlic, parsley, rosemary, thyme, and Parmesan cheese.
  7. Punch down the risen dough and roll it out into a rectangle, approximately 12×20 inches.
  8. Spread the herb mixture evenly over the dough.
  9. Cut the dough lengthwise into six strips, stack them, and then cut the stack into six smaller squares.
  10. Place the stacks upright in the prepared loaf pan. It’s okay if they’re not perfect—imperfections make it charming!
  11. Cover the pan with a towel and let the bread rise again for about 20-30 minutes.
  12. Bake for 25-30 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
  13. Let it cool slightly before serving. This is the hardest part, but trust me, it’s worth the wait!
