- 4 salmon fillets, skin-on (about 6 ounces each)
- 3 tablespoons unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, zested and juiced
- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: crushed red pepper flakes for a bit of heat
If you’re out of fresh herbs, dried herbs can be a practical substitute; just remember to use about a third of the amount called for with fresh. And if your pantry is missing chicken broth, water with a pinch of salt can suffice in a pinch.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a small bowl, combine the softened butter, minced garlic, parsley, thyme, lemon zest, salt, and pepper. Mix until well blended.
- Place the salmon fillets on the prepared baking sheet, skin-side down. Spread the garlic herb butter evenly over the salmon, pressing gently to adhere.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
- While the salmon is baking, rinse the rice under cold water until the water runs clear. This helps to remove excess starch and prevents clumping.
- In a medium saucepan, heat the olive oil over medium heat. Add the rice and toast for about 2 minutes, stirring frequently, until the grains become slightly translucent.
- Add the chicken or vegetable broth and lemon juice to the rice. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and season with salt and pepper to taste. For an extra burst of flavor, sprinkle a bit of additional lemon zest over the top.
- Once the salmon is ready, serve it over a bed of lemon rice, garnishing with additional fresh parsley if desired.
