  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Scale

Here’s a list of what you’ll need to make this comforting dish. Remember, cooking is all about flexibility, so feel free to make substitutions where needed.

  • 2 cups cooked white rice (or brown rice for a healthier twist)
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup broccoli florets (optional, for added veggies)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Transfer to a plate and set aside.
  3. In the same skillet, melt the butter over medium heat. Stir in minced garlic and cook until fragrant, about 1 minute.
  4. Gradually add the heavy cream to the skillet, stirring constantly. Bring the mixture to a simmer and let it thicken slightly, about 3-4 minutes.
  5. Stir in the Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is smooth.
  6. Add the cooked rice and broccoli florets to the skillet, stirring to coat everything evenly with the sauce. Return the chicken to the skillet and toss everything together.
  7. Transfer the mixture to a baking dish and bake for 20-25 minutes until the top is golden and bubbly.
  8. Garnish with fresh parsley before serving.
