Creating these cookies is straightforward, using ingredients you probably already have in your pantry. Here’s what you’ll need:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon instant espresso powder
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

If you’re out of brown sugar, you can substitute with white sugar mixed with a bit of molasses, which I’ve done on more than one occasion when my pantry was running low.

Instructions

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and espresso powder until fully incorporated.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
