Ingredients
Scale
- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
Feel free to substitute the smoked paprika with regular paprika if you prefer a milder flavor, or add a dash of cayenne pepper for a bit of heat. The beauty of this recipe is its flexibility to suit your taste.
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire rack on top. This setup will allow the air to circulate around the chicken, ensuring even crispiness.
- Pat the chicken thighs dry with paper towels. This step is crucial for achieving that golden, crispy skin.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, smoked paprika, thyme, and onion powder.
- Rub the seasoning mixture all over the chicken thighs, making sure to get under the skin as well. This is where the flavors really shine!
- Place the seasoned chicken thighs skin-side up on the wire rack. Bake in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving. This allows the juices to redistribute, keeping each bite tender and flavorful.
