Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- 3 cups fresh spinach
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
If you’re missing any of these ingredients, don’t worry. You can swap chicken breasts for thighs if that’s what you have on hand, or even use a mix of different mushrooms to add more depth to the dish. The flexibility of this recipe makes it a favorite in my house, allowing me to use whatever fresh ingredients I have available.
Instructions
- Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add butter and allow it to melt. Toss in the sliced mushrooms and cook until they’re browned and have released their moisture, about 5 minutes.
- Add the minced garlic to the mushrooms and sauté for another minute until fragrant.
- Pour in the heavy cream, chicken broth, and thyme. Stir well, scraping the bottom of the pan to incorporate all those delicious browned bits. Let the sauce simmer for about 5 minutes until slightly thickened.
- Return the chicken to the skillet, nestling it into the sauce. Add the fresh spinach, allowing it to wilt into the creamy mixture. Simmer everything together for another 3-4 minutes until the chicken is cooked through.
- Sprinkle the grated Parmesan cheese over the top, letting it melt into the sauce, and give everything a final stir before serving.
Each time I make this dish, I’m reminded of those early cooking days when I’d burn pies while answering phone calls or over-salt soups in a rush. It’s a reminder that cooking is as much about the process as it is about the final product, and every little mishap is a lesson in disguise.
