In keeping with my philosophy of using everyday ingredients to create something special, here’s what you’ll need:
- 1 pound chicken breast, cut into bite-sized pieces
- 4 cups Yukon Gold potatoes, diced
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
If you’re out of Yukon Gold potatoes, russet potatoes can work in a pinch. And for a touch of heat, consider adding a pinch of red pepper flakes.
Instructions
Let’s dive into making this comforting dish. I promise it’s as straightforward as it is delicious.
- Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then brown them in the skillet for about 5-6 minutes. Transfer the chicken to a plate and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Stir in the heavy cream, chicken broth, and dried thyme. Let the mixture simmer for 2-3 minutes until slightly thickened.
- Place the diced potatoes in the prepared baking dish. Pour the creamy garlic sauce over the potatoes, ensuring they are well-coated.
- Add the browned chicken pieces on top of the potatoes. Sprinkle the shredded cheddar cheese over everything.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.
- Let the casserole rest for a few minutes before serving. This is a great time to share some stories or laughter around the table, just like we did during those Sunday dinners growing up.
