- 1 pound ground beef

Feel free to swap the ground beef for ground turkey or chicken if you’re looking for a lighter version. Add a bit more spice if you’re in the mood for a kick, or throw in some beans for extra protein. This dish is your canvas.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.
- Add the chopped onion and bell pepper to the skillet with the beef. Sauté until the vegetables are soft, about 5 minutes. Stir in the minced garlic, salt, black pepper, and smoked paprika, cooking for an additional minute until fragrant.
- Add the uncooked rice to the skillet, stirring to coat it with the beef and vegetable mixture. This step allows the rice to soak up all those wonderful flavors.
- Pour in the beef broth and the undrained diced tomatoes. Stir to combine everything well. Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Stir in the corn and sprinkle the shredded cheddar cheese over the top. Cover the skillet again and let the cheese melt, about 3-5 minutes.
- Once the cheese is melted and bubbly, remove the skillet from the heat. Garnish with sliced green onions if desired and serve hot.
