  • 1 cup shredded cheddar cheese
  • Sliced green onions for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the chopped onion and bell pepper to the skillet with the beef. Sauté until the vegetables are soft, about 5 minutes. Stir in the minced garlic, salt, black pepper, and smoked paprika, cooking for an additional minute until fragrant.
  3. Add the uncooked rice to the skillet, stirring to coat it with the beef and vegetable mixture. This step allows the rice to soak up all those wonderful flavors.
  4. Pour in the beef broth and the undrained diced tomatoes. Stir to combine everything well. Bring the mixture to a boil, then reduce the heat to low and cover the skillet. Let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Stir in the corn and sprinkle the shredded cheddar cheese over the top. Cover the skillet again and let the cheese melt, about 3-5 minutes.
