Feel free to substitute the strawberries and blueberries with any seasonal berries that you have on hand. Goat cheese can be a delicious alternative to feta for a different flavor profile, and if you’re not a fan of nuts, sunflower seeds provide a nice crunch as well.
Instructions
- Begin by washing and drying the spinach leaves thoroughly. I like to use a salad spinner to get rid of excess water, ensuring the dressing clings to the leaves better.
- In a large salad bowl, combine the spinach, sliced strawberries, blueberries, orange segments, and red onion.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
- Pour the dressing over the salad, tossing gently to coat all the ingredients evenly. I’ve found that using your hands to mix the salad ensures everything is well-coated without bruising the spinach leaves.
- Top the salad with crumbled feta cheese and your choice of nuts for that delightful crunch.
- Serve immediately, or if you prefer, let it sit for a few minutes to allow the flavors to meld together.
