Learn how to make delicious Cilantro Lime Chicken Burrito Bowls. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Scale

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Juice of 2 limes
  • 1 cup fresh cilantro, chopped
  • 2 cups cooked rice (white or brown)
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • Salt and pepper, to taste

Feel free to substitute the chicken with tofu for a vegetarian twist, or add a sprinkle of cheese if you’re feeling indulgent. The beauty of this dish lies in its adaptability, a sentiment I hold dear after countless nights of creatively feeding a family of picky eaters.

Instructions

  1. Start by marinating your chicken. In a large bowl, combine olive oil, cumin, chili powder, garlic powder, lime juice, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Let them marinate for at least 30 minutes. This step can be done a day ahead, letting the flavors deepen overnight.
  2. Heat a skillet over medium heat. Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice sear. Remove from heat and let rest for a few minutes before slicing.
  3. In a large bowl, combine cooked rice, black beans, corn, and half of the chopped cilantro. Toss to mix well.
  4. Assemble your bowls by dividing the rice mixture among serving bowls. Top with sliced chicken, avocado, cherry tomatoes, and the remaining cilantro.
  5. Season with additional lime juice, salt, and pepper as desired. Serve immediately with your favorite hot sauce for an extra kick.

I’ve found that playing some of my favorite tunes while cooking turns even the busiest nights into a little escape. Music, like food, has a way of bringing us back to ourselves, even on the most hectic days.
