The beauty of this dish lies in its simplicity and the ability to use everyday ingredients. Here’s what you’ll need:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 chipotle peppers in adobo sauce, chopped
- 1 cup cooked rice (brown or white, your choice)
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Optional: shredded cheese, sour cream
Instructions
Now that you’ve gathered your ingredients, it’s time to cook! Follow these steps to create your Chicken Chipotle Bowl:
- Begin by seasoning the chicken breasts with garlic powder, cumin, smoked paprika, salt, and black pepper.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes.
- In the same skillet, add the chopped chipotle peppers and sauté for 1-2 minutes to release their flavor.
- Slice the rested chicken and add it back to the skillet along with the chipotle peppers. Toss everything together so the chicken is well-coated with the smoky flavor.
- Assemble the bowls by dividing the rice, black beans, and corn among four bowls. Top with the chipotle chicken slices.
- Add diced avocado and a sprinkle of fresh cilantro to each bowl. Serve with lime wedges on the side, and for an extra touch, add shredded cheese or sour cream if desired.
