  • Total Time: 45 minutes

Ingredients

Scale

The beauty of this dish lies in its simplicity and the ability to use everyday ingredients. Here’s what you’ll need:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup cooked rice (brown or white, your choice)
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional: shredded cheese, sour cream

Instructions

Now that you’ve gathered your ingredients, it’s time to cook! Follow these steps to create your Chicken Chipotle Bowl:

  1. Begin by seasoning the chicken breasts with garlic powder, cumin, smoked paprika, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes.
  3. In the same skillet, add the chopped chipotle peppers and sauté for 1-2 minutes to release their flavor.
  4. Slice the rested chicken and add it back to the skillet along with the chipotle peppers. Toss everything together so the chicken is well-coated with the smoky flavor.
  5. Assemble the bowls by dividing the rice, black beans, and corn among four bowls. Top with the chipotle chicken slices.
  6. Add diced avocado and a sprinkle of fresh cilantro to each bowl. Serve with lime wedges on the side, and for an extra touch, add shredded cheese or sour cream if desired.
