Learn how to make delicious Carrot Cake Cookies. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Scale

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans (optional, but recommended)
  • 1/4 cup raisins (optional)
  • 1/4 cup cream cheese, softened (for frosting)
  • 1/2 cup powdered sugar (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

If you’re looking to make these cookies a bit healthier, you can swap half of the all-purpose flour for whole wheat flour or use coconut sugar instead of brown sugar for a natural sweetness. My kitchen has always been a place of experimentation, and these substitutions are a testament to that spirit.

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture, beating until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots, chopped nuts, and raisins (if using) until evenly distributed.
  7. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. While the cookies cool, prepare the frosting by beating the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  11. Once the cookies are cool, spread a small dollop of frosting on top of each cookie.

One tip I’ve found helpful is to chill the dough for about 30 minutes before baking. It helps the cookies hold their shape and enhances the flavors. And remember, perfection isn’t the goal—deliciousness is!
