  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup crushed Ritz crackers
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

If you’re out of sour cream, plain Greek yogurt makes a great substitute, and if you prefer a bit more crunch, try topping it with some fried onions instead of crackers.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or cooking spray.
  2. In a large pot, bring salted water to a boil. Add the broccoli florets and cook for about 3-4 minutes until just tender. Drain and set aside.
  3. In a large mixing bowl, combine the cheddar cheese, mozzarella cheese, sour cream, mayonnaise, and condensed cream of mushroom soup. Stir in the garlic powder, salt, and pepper.
  4. Add the cooked broccoli to the cheese mixture and toss until well coated.
  5. Transfer the broccoli and cheese mixture into the prepared baking dish, spreading it evenly.
  6. In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the cracker topping is golden brown.
