- 4 cups fresh broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup crushed Ritz crackers
- 2 tablespoons melted butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
If you’re out of sour cream, plain Greek yogurt makes a great substitute, and if you prefer a bit more crunch, try topping it with some fried onions instead of crackers.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or cooking spray.
- In a large pot, bring salted water to a boil. Add the broccoli florets and cook for about 3-4 minutes until just tender. Drain and set aside.
- In a large mixing bowl, combine the cheddar cheese, mozzarella cheese, sour cream, mayonnaise, and condensed cream of mushroom soup. Stir in the garlic powder, salt, and pepper.
- Add the cooked broccoli to the cheese mixture and toss until well coated.
- Transfer the broccoli and cheese mixture into the prepared baking dish, spreading it evenly.
- In a small bowl, combine the crushed Ritz crackers with the melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the cracker topping is golden brown.
