  • 1.5 pounds fresh cod fillets
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 2 tablespoons freshly chopped parsley
  • 1 teaspoon garlic powder
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Lemon wedges for serving

If you can’t find fresh cod, feel free to substitute with haddock or another flaky white fish. And if you’re out of panko, regular breadcrumbs will work just fine—they’ll just be a bit denser.

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with a bit of olive oil.
  2. Pat the cod fillets dry with paper towels and place them in the prepared baking dish. Season with salt and pepper to your liking.
  3. In a medium bowl, combine the panko breadcrumbs, Parmesan cheese, melted butter, olive oil, garlic powder, lemon zest, and chopped parsley. Mix until the breadcrumbs are evenly coated.
  4. Spoon the breadcrumb mixture over the cod fillets, pressing lightly to adhere.
  5. Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The breadcrumbs should be golden brown and crisp.
  6. Remove from the oven and drizzle with fresh lemon juice. Let it rest for a minute or two before serving.

From my many attempts and a few overcooked disasters, I’ve learned that keeping an eye on the fish as it bakes is key. Cod cooks quickly, and nobody likes dry fish!
