- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (10 ounces) enchilada sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with a little olive oil.
- In a large skillet over medium heat, add olive oil and sauté the chopped onion and garlic until the onion becomes translucent.
- Add the ground beef, cooking and breaking it apart with a spoon until browned and fully cooked. Drain any excess fat.
- Stir in the black beans, enchilada sauce, cumin, chili powder, salt, and pepper. Let the mixture simmer for about 5 minutes to meld the flavors.
- Layer four corn tortillas at the bottom of the prepared baking dish. Top with half of the beef mixture, then sprinkle with half of the cheddar and Monterey Jack cheeses.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese. Cover with foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.
