  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) enchilada sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with a little olive oil.
  2. In a large skillet over medium heat, add olive oil and sauté the chopped onion and garlic until the onion becomes translucent.
  3. Add the ground beef, cooking and breaking it apart with a spoon until browned and fully cooked. Drain any excess fat.
  4. Stir in the black beans, enchilada sauce, cumin, chili powder, salt, and pepper. Let the mixture simmer for about 5 minutes to meld the flavors.
  5. Layer four corn tortillas at the bottom of the prepared baking dish. Top with half of the beef mixture, then sprinkle with half of the cheddar and Monterey Jack cheeses.
  6. Repeat the layers with the remaining tortillas, beef mixture, and cheese. Cover with foil.
  7. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  8. Let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.
