Ingredients
Scale

- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup ripe bananas, mashed (about 2 medium bananas)
- 1/2 cup vanilla wafers, crushed
- 1/2 cup chocolate chips
- Optional: 1/4 cup chopped walnuts for added crunch
Feel free to substitute the chocolate chips with white chocolate chips for a lighter touch, or add a splash of cinnamon for extra warmth.
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a large bowl, whisk together the melted butter and sugar until well combined.
- Add the eggs and vanilla extract, beating until the mixture is smooth and glossy.
- Sift in the cocoa powder, flour, baking powder, and salt. Stir until just combined.
- Gently fold in the mashed bananas, crushed vanilla wafers, and chocolate chips.
- Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
- If using, sprinkle the chopped walnuts on top for a delightful crunch.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool in the pan for at least 15 minutes before cutting into squares.
I often find myself singing along to my favorite tunes while waiting for these brownies to bake. It reminds me of the times when my grandmother and I would hum old classics in the kitchen, surrounded by the comforting smells of home.
